Brian, you have gots lots of answers so far, but one resource that should be
mentioned is the article "Logical volume management" at
http://www.ibm.com/developerworks/library/l-lvm2/?ca=dgr-lnxw02aLinuxLVM2&S_TACT=105AG.
I assume you want to use lvm since it makes it so easy to change partition
sizes if your initial size estimates were off.

For my new (in November 2007) system I decided to use lvm for the first
time, and the above article really helped me to figure out what should be done
when I was setting up a new (external) disk after the initial Debian testing
install with lvm was completed for the internal drive.

As others have suggested you could also reinstall (which probably handles
lvm almost transparently).  However, if you don't want to redo that work
each time you want to change partition size or install a new disk, then the
above article should really help you.
