 From either Kubuntu or Knoppix, you must first make a directory.  I used:

sudo mkdir /C

Then, you have to mount it using sudo:

sudo mount /dev/<disk containing your C Windows Partition>

In my case, on the laptop this was /dev/sdb2

I could then read/write any files on that partition using either Knoppix 
or Kubuntu.
