I very much enjoyed Brent's presentation on Myth TV.
I was asked to post two URL's that might be of particular interest to
those getting into Video, regardless of platform. The first is primarily
a Windows site, but has some very useful information:

This one is a good link to understanding capturing, and mpeg vs. avi and
other formats

There are other interesting articles on this site regarding timebase
correctors and stuff. Read at your leisure, remember though that this
info is a bit dated, though a lot of the info is releavant regardless of
platform/OS.
